Thai Chicken Pizza
This is one of my our family's go to recipes. Super easy, quick & delicious! (my favorite words when it comes to food)
Ingredients
Pre-baked pizza crust
2-3 carrots
1 package of shredded cheese (we prefer the Monterey Jack)
1 orange bell pepper
2 chicken breasts
Thai peanut sauce (If you are a Target fanatic like us, then try the Archer Farms brand)
1. Pre-heat oven to 450
2. Cut up chicken breast and cook them (i.e. George Forman grill or on stove)
3. Grate carrots and set aside.
4. Cut up pepper and set aside.
5. Spread Thai peanut sauce on to pre-baked crust.
6. Add your cheese, carrots, peppers & chicken.
7. Cook until cheese is melted.
8. Enjoy.

I love living in the country and have all
my life.
This is a shot taken out by back door. What
do you think of my new planter that we made this year? It has its own special story!
Gardening just seems to be a part of living
in the country. My husband and I both enjoy it. He loves planting and I love reaping
the benefits of it. It does become tedious at times especially when we over do
it with the planting. It is so hard for us to see produce go to waste so we
often end up picking a lot extra and giving it away or asking others if they
would like to come and pick their own.
Right now we are in the picking season for Saskatoon berries. (Also
called Serviceberry or June berry in the U. S.) This is one of the things we
have overdone with planting. I was out picking on the weekend, yesterday and
today! To top that off we are in a heat wave here in south central Canada.
Here I am au natural, going out to pick. I
had a little fun with the camera. I wish I was more photogenic. Ask anyone that
has tried to get a picture of me. It is seldom that I have a natural smile. It
is also pretty hard to take a nice photo of yourself.
Gardening, country living and all that comes with it is a huge part of
the lives of my daughter and I, and therefore it is often hard to take
time to work in our Sweet Sparrow Design shop during the busy time of
summer. Feel free to take a look at the variety of items in our shop

Polka Dot Cupcakes
If there are two things I love, it's cupcakes and polka dots.
So why not mix them together?!
Let me show you how.
I should warn you that this is a little time consuming. Well, more time consuming then your average little ol' cupcake.
First get all your ingredients for white cupcakes.
I used just the pre-packaged white cake mix. (this mom is a little busy to make things from scratch)
Follow those handy dandy directions on the box.
When it's all mixed up, divide the batter into three bowls. I eyed it to make it even.
I decided to use the colors blue, green & orange. (since I already had the food coloring from my son's first birthday party)
So once you divide your batter, mix in a little color.
Then bake each color in a cake pan using the directions on the box.
After those are done baking, it's time to make some itty bitty cake pops.
If you aren't sure how to make cake pops, let me know you it's really easy.
I started off with the blue cake and put it in a big bowl. Take a little frosting and mix it all up. It's easier to use your hands to mash.
Then start to form your itty bitty balls.
Once you are done with the blue (or your color of choice), do the same to the others.
At the end of it, you will have a bunch of little tiny cake balls.
Now it's time for cake mix #2.
Mix all that up and once that is done, it's time to start getting the actual cupcakes ready.
First I started out by putting two little cake balls in the cupcake holder.
Then I poured some of the white cake batter onto those balls. Just a little bit though. Then I put two more little cake balls on.
Then I put some more white cake batter on top of that.
Then one more layer of cake balls.
Then topped that off with some white cake batter.
Repeat.
Just remember I did warn you it is time consuming!
Then bake them.
Frost them.
Enjoy them.
